GULAI AYAM PADANG

ela bukan peminat gulai ayam..satu2 nya gulai ayam yg ela mkn ialah gulai ayam nasi minyak trg..tapi lepas diperkenalkan oleh hubbie lauk ni..ela amatlah berkenan...ela cuba cari kat tenet dan akhirnya terjumpa yg hampir2 sama ngan gulai yg hubbie beli dari ibu indonesia di sini..bila try, ye mmg ada mcm nak sama..but of coz la...yg dibeli lebih sedap....ela jumpa resepi di sini dan telah diubah skit2 ajer....




1 whole chicken, cut into 8 small pieces

4 boiled eggs, peeled -tak letak

1 can (400 ml) of coconut milk

6 Lime leaves

2 stalk lemon grass

5 cm galangal -letak dalam paste

5 cloves -tak letak

1 tbs vinegar -ela guna air asam jawa

For the paste:

20 small shallots

10 garlic

4 red peppers

4 candlenuts

1 tsp turmeric powder -ela letak kunyit hidup

1 tsp coriander -tak ada in stock

4 tsp salt

1 tbs sugar

COOKING METHOD:

In a blender, put all the paste ingredients and grind it with 1 cups of water.

Pour the paste to a big wok together with lime leaves, lemon grass, galangal & cloves. Cook in medium hot until fragrant.

Add chicken pieces and stir.

Add coconut milk. Add one cup of water if necessary.

Let them boil for 15 minutes and turn to low heat. Cook through until chicken pieces are tender and the sauce is thickened. ( 45 minutes to 1 hour). Add the boiled eggs when chicken pieces have turned tender.

Add 1 tbs of vinegar.

Season to taste.

Serve them warm with rice or ketupat.


my method:
-tumis bahan kisar hingga wangi dan pecah minyak
-masukkan serai, daun limau purut dan air
-masukkan ayam dan reneh hingga ayam empuk
-bila ayam empuk, masukkan santan dan reneh lagi hingga pekat
-perasakan ngan garam, gula, air asam jawa
